Chef Alexandre Gauthier took over his family's restaurant in 2003 and brought in architect Patrick Bouchain to rework the property. Bouchain added two steel and glass pavilions that frame the dining room and open directly onto gardens and farmland. Gauthier's two-Michelin-starred cooking stays intensely regional: foraged ingredients, local seafood, game from the surrounding countryside. Accommodation takes the form of standalone garden huts with wood stoves, soaking tubs, and private terraces. Closer to an artistic manifesto than a country inn.
